- Pinch sugar (optional)
- 1 tbsp light soy
- 1 spring onion, finely chopped
- ½ tbsp dark soy
- 1 tbsp white wine vinegar
- ¾ tsp chilli flakes
- 1 tbsp tahini
- 3 garlic cloves, finely chopped
- 100 g noodles (dry weight), cooked
Place minced garlic, chopped spring onions, and chili flakes in a medium bowl.
Heat oil in a small saucepan over high heat until sizzling hot (test with a chopstick; the oil should sizzle).
Carefully pour the hot oil over the garlic mixture and stir to combine.
Add light soy sauce, dark soy sauce, white wine vinegar, tahini, and a pinch of sugar, mixing until smooth.
Cook the noodles according to package instructions and drain them well.
Toss the cooked noodles in the prepared sauce, ensuring they are evenly coated.
