Equipment

  • Measuring spoons
  • Food processor or blender
  • Small bowl
  • Knife
  • Spatula
  • Cutting board

Ingredients

  • 1 tbsp peanuts
  • 1 bunch of fresh cilantro
  • 1 minced hot green chile peppers
  • 1 clove garlic
  • 1 tbsp minced fresh ginger root
  • 2 tbsp lemon juice
  • salt to taste

Instructions

  • Roughly chop the cilantro, garlic, and ginger, then transfer them to a food processor.
  • Add the green chili, peanuts, and a pinch of salt, squeezing in fresh lemon juice for brightness.
  • Pulse the mixture, pausing to scrape down the sides, ensuring even blending.
  • If the mixture appears too thick, add a few drops of water and continue blending until smooth.
  • Once you achieve a creamy consistency, transfer the chutney to a bowl, taste, and adjust seasoning if needed.

Notes

  • Roasting the peanuts enhances their flavor, giving the chutney a deeper, nuttier taste.
  • Adding a teaspoon of sugar balances the spice and acidity, creating a more well-rounded chutney.
  • For an extra kick, toss in a few mint leaves for a refreshing twist.
