- ½ Cup chicken broth
- ½ Tsp pepper
- 1 Cup Salsa
- 2 Tsp Minced garlic or 1 tsp minced garlic powder
- 3 Lbs boneless, skinless chicken thighs
- 2 Tbsp chili powder- optional
- 1 Tsp dried onion flakes
- 1 Tsp Salt
- 1 Tsp Cumin
In a small bowl, mix garlic powder, onion powder, cumin, salt, pepper, and optional chili powder.
Rub the seasoning mixture evenly on both sides of the chicken thighs.
Pour chicken broth into the Instant Pot.
Place the seasoned chicken thighs into the pot.
Pour salsa evenly over the chicken.
Secure the Instant Pot lid and set the valve to "sealing."
Press the "poultry" button and set the timer to 12 minutes.
Once cooking is complete, the Instant Pot will beep.
Use a long wooden spoon to carefully switch the valve to "venting" for a quick release.
Open the lid once all the steam has been released.
Shred the cooked chicken thighs in the pot using two forks.
Stir the shredded chicken with the broth and salsa, then.
