- 1½ cup finely diced celery
- 1 lb breakfast sausage
- ¾ cup melted butter, or as needed
- 3 tsp poultry seasoning
- ¾ cup chopped onion
- ¼ tsp ground black pepper
- 8 cups white bread cubes
Heat a large skillet over medium-high heat.
Cook and stir sausage in the skillet for 5-7 minutes, until browned and crumbly.
Use a slotted spoon to transfer sausage to a large bowl.
Pour the sausage drippings into a measuring cup and add enough melted butter to make 1 cup.
Pour this mixture into the skillet over medium heat.
Sauté celery and onions in the butter mixture until the onions are tender, without browning.
Stir in 1/3 of the bread cubes.
Transfer the mixture to the bowl with the sausage.
Add the remaining bread cubes, poultry seasoning, and pepper, then mix well.
Stuff the mixture into the body and neck cavities of a turkey and roast as desired.
