- ½ tsp freshly ground black pepper, or to taste
- ½ tsp salt, or to taste
- 2 tbsp sesame oil
- 1 lb uncooked medium shrimp, peeled and deveined
- 2 cloves garlic, finely minced, or more to taste
- ½ cup frozen corn
- 3 tbsp low-sodium soy sauce, or more to taste
- 3 tbsp thinly sliced green onions
Heat oil in a skillet and cook shrimp until done.
Remove and set aside.
In the same skillet, add frozen vegetables and cook until softened.
Add minced garlic and cook until fragrant.
Push the veggies to one side and scramble eggs on the other side.
